52100 is a steel that has proven itself over the last century, and up to date still one of the most reliable high carbon steels out there. It is known to have an extraordinary fine grain and remains quite tough even at hardness up to 62~63HRC.
The heart of this blade performance is its grind - zero convex grind, a feature that can only be handmade and currently there are no machinery in the world able to reproduce such geometry. Zero convex grind refers to a geometry that reaches the edge basically in zero, with a secondary bevel near non existant (almost not visible).
This features is a game changer and will make you feel a completely new experience if you never used a zero grind chef knife before.
As per the videos, it can cut food with ease even when unsharpened, and to sharpen it is pretty much fast and easy.
This blade has been professionally heat treated with my personal recipe on a proper kiln, which has a precision of +-3 degrees, ensuring completely optimized results, which is one of the reason why i do lifetime guarantee on my knives.
Handle: century old A+ grade guayubira, a south american wood that is very dense and heavy, as well in my opinion some of the most beautiful out there. Its growth rings and pattern is just pure poetry and can be appreciated from all angles. The wood is extremely stable and should not require any over maintenance, treat it like a regular hardwood (ironwood or ebony) and it will be good to go for the next decades.
Delivered hand sharpened to 2000 grit with the beautiful red zipped pouch included.
